To make the burrito stuffed zucchini boats, you will need the following:

 

  • Cauliflower rice
  • Black beans
  • Corn
  • Cheese
  • Zucchini

 

First, cut the zucchini lengthwise and hollow out the centers. Fix all of the other ingredients and combine them to fill the center of the zucchini. Once the zucchini boats are filled with the fillings, bake them in the oven at 350 degrees for 25-30 minutes.

 

2. Philly Cheesesteak Skillet

 

This skillet includes all the yumminess of a Philly Cheesesteak without the bread! It’s a perfect keto-approved recipe for your weeknight meals, too!

 

To make this recipe, you will need:

  • Red pepper
  • Green pepper
  • Hamburger meat
  • Provolone cheese

 

First, brown the hamburger meat and drain it to remove the grease. Slice up the peppers and then cook them in the same skillet until tender. Combine the hamburger meat and mix around the peppers. Lastly, top the skillet with provolone cheese. Broil in the oven at 500 degrees for 5-7 minutes.

 

3. Chicken Fajita Casserole

 

This is the best keto-approved recipe for a weeknight meal.

 

Fajitas are a delicious, staple recipe surely anyone can love. What better way to turn them into a casserole for you to enjoy on the keto diet?

 

Ingredients needed:

 

  • Chicken
  • Red pepper
  • Green pepper
  • Fajita seasoning
  • Monterey Jack cheese

 

First, preheat the oven to 425 degrees. In a casserole dish, place the chicken on the bottom then sprinkle half of the seasoning over the chicken. Next, slice the peppers and lay them on the chicken. Sprinkle the rest of the fajita seasoning over the peppers and top with Monterey Jack cheese.

 

Place the casserole dish in the oven for 20-30 minutes and enjoy!

 

4. Shrimp Zoodle Alfredo

 

Alfredo is a popular dish, but unfortunately, it is not that healthy. Here is a great way to get the taste of alfredo with not as much guilt! Plus, this is a super easy recipe to make.

 

Ingredients you will need for this dish:

 

  • Shrimp
  • Zucchini noodles
  • Heavy cream
  • Chicken broth
  • 2 garlic cloves
  • Grated parmesan cheese

 

First, cook the shrimp and set them aside. Next, cook the noodles for a few minutes to soften them up. In a separate saucepan, heat up the cloves of garlic in a small amount of chicken broth followed by the heavy cream and parmesan cheese.

 

Simmer the sauce to thicken it up and toss in the noodles and shrimp to coat them in the sauce.
