Children start becoming picky eaters from the age of 2 or 3. There are adults who are also picky eaters. Due to these, cooking becomes a daunting task. Many children do not eat healthy food just because they do not like it. This results in incomplete nutrition.
Every mother in this world is worried about the daily nutrition of her child. To add to it, if the child is a picky eater, she just has to find a way out to get her child enough nutrition through his/her favorite food.

Preparing Healthy Meals for Picky Eaters

Chicken and Spinach Quesadillas

This is a Mexican delight and kids love to eat Mexican food. Also, instead of spinach you can add any other vegetables and instead of chicken you can use turkey.
  • 10 oz. frozen spinach
  • 1/2 cup, prepared pesto sauce
  • 1 cup, diced cooked chicken
  • 1 cup, shredded cheese

Place the 4 tortillas on a board and spread the pesto sauce on the tortillas. Squeeze all the water from spinach and place it on the tortilla. Add cheese and chicken and place the remaining tortilla and press them together firmly. Heat the skillet and cook each quesadilla until they turn golden brown and the cheese melts.

Rice and Bean Burritos

  • 1 small chopped onion
  • 1 tablespoon, olive oil
  • 1 cup, canned black beans (mashed)
  • 1 cup, cooked rice
  • cooking spray
  • 2 tablespoons, salsa sauce
  • 1 link of cooked turkey (diced or optional)
  • 4 sun dried tomato wraps
  • sour cream

Initially apply cooking spray to a baking dish and preheat the oven at 300 ºF. Put some olive oil in a skillet and cook the onions until it becomes soft. Add the beans, seasoning, rice, salsa, and sausages to it and heat this mixture. ¾ cup of this mixture is then placed at the middle of the wrap and is topped with cheese.
Place these burritos in the oil coated baking dish. Place this dish in oven and wrap it with foil and bake the burritos for 15 minutes. Serve the burritos with salsa and sour cream.
