Green and Red Tomato Salsa
Ingredients
  • 8 ounces green tomatoes (chopped)
  • 8 ounces ripe and red tomatoes (chopped)
  • 1 cup fresh corn kernels
  • ¼ cup fresh chives (snipped)
  • 2 tablespoons fresh lime juice
  • ⅛ teaspoon ground black pepper
  • Salt as per taste
Directions for Cooking
Take a medium-sized saucepan and add the ingredients - tomatoes, corn and chives. Mix together the ingredients and stir in lemon juice, pepper and salt. For better taste and flavor, keep this tomato salsa in the refrigerator for at least 1 hour. If the chilling time exceeds 1 hour, make sure you drain the liquid before serving.
Tortilla Soup with Lime and Chicken
Ingredients
  • 5-inch corn tortillas
  • 12 ounces boneless chicken (cut into strips)
  • ¾ cup canned tomatoes with juices (stewed in Mexican style)
  • 2 green onions (chopped)
  • 1 clove garlic (minced)
  • ¼ cup fresh cilantro (chopped)
  • 1 bay leaf
  • ¼ teaspoon ground cumin
  • ⅛ teaspoon dried, ground red pepper
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons olive oil
  • 2 ounces low salt chicken broth
  • 2 cups water
  • Salt as per taste
Directions for Cooking
Prepare tortilla by brushing with olive oil on one side and cutting it into half. Place one half tortilla above the other and cut into ¼ inch size strips. Preheat oven to about 325º Fahrenheit. Place the cut tortilla pieces into a non-sticky baking sheet, and bake in the oven for nearly 17 minutes or until they turn light golden color. Remove baked tortillas and keep aside.

In a saucepan, combine together the ingredients - water, chicken broth, tomatoes, garlic, cumin, bay leaf and red pepper. Bring this mixture to boil and simmer it for another 5-7 minutes. Add chicken pieces and simmer the soup until the chicken pieces are cooked properly. Then, stir in lime juice, green onions, cilantro and also, add salt and pepper as per taste. Sprinkle baked tortillas in the soup while serving.

Guacamole with Lemon and Tomato
Ingredients
  • 3 large ripe avocados (peeled and pitted)
  • 3 large tomatoes (peeled and diced)
  • Juice of one large lemon
  • 1 medium-sized onion (finely chopped)
  • 2 green chili (seeded and cut into pieces)
  • ⅓ cup cilantro (chopped)
  • Salt for taste
Directions for Cooking
Cut two avocados into small pieces (preferably ½ inch sizes). In a large bowl, mash the remaining one avocado and add the cut avocado pieces. Following this, add tomato, onion, chili, cilantro, lemon juice and salt into the bowl. Mix well the guacamole mixture with a fork and serve in bowls. In case you like the taste of jalapeños, you can also add chopped jalapeños for extra spiciness.
