Healthy Recipes for Picky Eaters That'll Make Them Crave More

Picky eating can be a serious problem if your child dislikes a myriad of food items. It can be really difficult trying to feed healthy food to him/her.
Picky eating refrains the kid from getting important nutrients present in various fruits, vegetables, and meat products, and can further cause health problems like weakness and anemia. So, planning a healthy diet for picky eaters is important, to ensure that all the nutrients are consumed. Dealing with such kids can be very difficult.

Banana Cookies

Ingredients
  • Ripe bananas - 3
  • Rolled oats - 2 cups
  • Dates (pitted and chopped) - 1 cup
  • Vegetable oil - ⅓ cup
  • Vanilla extract -1 teaspoon
Procedure

Preheat the oven to 350 ºF. Meanwhile, take a bowl and mash the ripe bananas in it. Then, combine the dates, vegetable oil, rolled oats, and vanilla extract with the mashed bananas. Combine all the ingredients properly and leave it to sit for about 15 minutes. Now, take a cookie sheet and drop the oatmeal-banana mixture on it, with help of a teaspoon. Place the cookie sheet in the preheated oven and bake the yummy banana cookies. You can pour some chocolate syrup to make it more tasty.

Fruit Smoothie

Ingredients
  • Fresh blueberries - ⅓ cup
  • Fresh raspberries - ⅓ cup
  • Large fresh strawberries (hulled) - 4
  • Pomegranate juice - ⅓ cup
  • Mango juice - ⅓ cup
  • Milk - ⅔ cup
  • Honey - 2 tablespoons
Procedure

Place all the fruits and juices into a blender and then add honey and milk. Cover the blender and puree the mixture to attain a smooth texture. Pour the fruit smoothie in tall glasses and serve chilled.

Chicken Nuggets

Ingredients
  • Low-fat buttermilk - ½ cup
  • Chicken breast (skinless, boneless, cut into forty pieces) - 1½ pounds
  • Cornflakes - 3¾ cups
  • Paprika - 1 teaspoon
  • Sugar - ½ teaspoon
  • Salt - ¼ teaspoon
  • Prepared mustard - ½ cup
  • Honey - ¼ cup
  • Grated peeled fresh ginger - ½ teaspoon
Procedure

First, take a large bowl and combine the buttermilk and chicken in it. Keep the bowl in the refrigerator and let the chicken marinate for about 30 minutes. After that, drain the buttermilk and keep aside the tender chicken. Preheat the oven to 375 ºF. Add the paprika, sugar, salt, and cornflakes, in a food processor container and blend the mixture until the cornflakes are chopped finely. Then, pour this mixture over the chicken in the bowl and toss the chicken to coat each piece completely. Take a baking dish and coat it with cooking spray. Place the coated chicken in the baking dish and bake it in the preheated oven for about 15 minutes. Meanwhile, prepare the sauce for chicken by combining honey, ginger, and mustard. Serve this sauce with cooked chicken.
