- Yellow onion, finely chopped, 1 cup
- Celery, finely chopped, ½ cup
- Carrots, peeled, finely chopped, ½ cup
- Thyme, fresh, chopped, ¼ cup
- Leek, finely sliced, ¼ cup
- Tarragon, fresh, chopped, ¼ cup
- Parsley, fresh, chopped, ¼ cup
- Black pepper, freshly ground, to taste
Directions for Preparation:
- Combine the meat with celery, onions, leeks, carrots, thyme, parsley, tarragon, black pepper, and garlic in the bowl of the food processor.
- Now, purée it on high speed. Turn it off.
- Mix the egg whites with this mixture. Stir well to blend.
- Add stock to the mixture and pour it into a large pot.
- Stir constantly and bring it to a boil.
- Simmer for 15 minutes.
- Remove from heat.
- Ladle the clear liquid into a bowl and strain it through a layer of cheesecloth.
- Strain again if you see any solids in the broth.
- Now, heat it again without bringing it to boil. Serve immediately.

You Will Need:

- Water, hot, 1 cup
- Sugar, 2 cups
- Lemon juice, fresh, 2 cups

- Put the sugar and hot water in a 1 gallon container.
- Stir until the sugar gets dissolved.
- Now, add the lime juice and cold water.
- Stir the mixture well.

- Separate the pieces.
- Remove the outer covering.
- Squeeze out the juice and pour it into a large jug.
- Peel the mangoes.

- Water, 1½ cups
- Lemon juice, 2 tbsp.
Directions for Preparation:
- Put water, chopped romaine lettuce, and spinach in a blender.
- Purée this mixture in the blender on low.

- Gradually, move to higher speeds while adding the celery, apple, and the pear.
- Now, add the coriander and parsley.

Caramel Custard
You Will Need:
- Eggs, 6
- Milk, 3 cups
- Sugar, 1½ cups
- Vanilla Essence, 2 tsp.

- Take a thick-bottomed pan.

- Add a few drops of water.
- Heat on low until the sugar caramelizes.
- Now, take two 6-ounce custard cups and pour the caramel into it. Let it set for 10 minutes.
- Take a large bowl.
- Beat the eggs, milk, vanilla extract, and the remaining sugar.
- Pour this mixture over the caramel.
- Place the cups in two 8″, square baking pans.
- Boil some water and pour it in the pans to a depth of 1 inch.
- Bake it at 350° for 40 to 45 minutes.
- Remove the pans and let them cool.
