Easy Banana Bread
Ripe bananas, medium size, 3
Flour, 2 cups
Unsalted butter, ½ cup
Sour cream, ½ cup
Sugar, 1 cup
Baking powder, 1 tsp.
Vanilla extract, 1 tsp.
Baking soda, ½ tsp.
Salt, ½ tsp.
Sift the flour, baking soda, salt, and baking powder together over a flat plate.
In a bowl, cream the butter, gradually add sugar, and eggs, one at a time, beating well with an electric mixer after each addition.
Stir in the vanilla extract. Peel bananas, cut them into small pieces, and mash them with a fork.
Measure out 1 cup of mashed banana, add sour cream and blend them well.
Blend together ⅓ of the dry flour mixture into the butter mix.
Keep adding the banana mix and the remaining dry flour mix alternately, stirring well after each addition.
Pour the batter into a prepared loaf pan and smooth the top with a spoon.
Bake in a preheated oven to 325ºF.
Insert a knife into the center of the bread, to check if it comes out clean.
Transfer the bread to a cooling rack and let it to cool down completely.
Banana Nut Bread
Ripe bananas, 3
Chopped walnuts, ½ cup
Flour, 1½ cups
Unsalted butter, 4 oz.
Sugar, 1½ cups
Baking soda, 1 tsp
Vanilla extract, 1 tsp
In a bowl, sift flour and baking soda together.
In another bowl, using an electric beater, beat sugar, eggs, vanilla, and butter together. Blend the flour, until the batter is smooth.
Mash bananas with a fork, add chopped walnuts to it, and set aside. Pour the batter into two greased loaf pans.
Bake in a preheated oven (375ºF), for about 55 minutes.
Cut slices, pour some honey over it and enjoy your banana nut bread!
Banana Nut and Oats Bread
Self-raising flour, 2½ cups
Ripe bananas, mashed, 2
Sugar, ½ cup
Milk, 1 cup
Shredded coconut, 1 cup
Honey, ½ cup
Walnuts, chopped, ½ cup
Rolled oats, 1 cup
Rolled oats and walnuts mix, 1 tbsp.
In a large bowl, mix eggs, sugar, bananas, milk, and honey.
Blend in the flour, shredded coconut, rolled oats, and walnuts. Make sure no lumps remain.
Pour the batter into a greased loaf pan, sprinkle rolled oats, and walnuts on top.
Bake in a preheated oven to 180ºF, until the knife comes out clean.
While choosing the banana, make sure it is ripe, but not overripe. An overripe banana will spoil the flavor and taste of the bread. Baking the bread at home will not only satisfy hunger, but you will also be assured of its health benefits.
