Although this substance occurs naturally in fruits and certain berries found in mountainous laurel ashes, it is absolutely synthetic and not natural.
What is Potassium Sorbate
In plain terms, it is potassium salt of sorbic acid. It is a white crystalline powder that is extensively used as a fungistatic agent because of its antimicrobial properties. Mostly used in food products, this preservative reduces the risk of food-borne maladies and increases food shelf-life. It is highly effective when it comes to reducing yeast, mold and any other aerophile bacteria growing in the food. When potassium hydroxide is neutralized with sorbic acid, potassium sorbate is produced. Further, when this substance is dissolved with water, it ionizes and works as an effective agent against molds, bacteria, and yeasts. In different food products like yogurt, cheese, baking mixes, doughs, bread, pies and fillings, cakes, etc., it ranges at 250 ppm to 1000 ppm levels. That is, it has an effect in the body up to pH 6.5 and hence, can be used to raise pH formations as well.

Speaking of the uses, it is, at times, used as a finishing substance in wines to avoid it getting re-fermented again. It also acts as a sweetener to wines, and is referred to as wine stabilizer.
