The heart of the blue agave plant, called the pina, is what is responsible for tequila. On an average, a pina weighs about 50 kilos, and when harvested, can yield 12 bottles of the drink. To add, a blue agave plant takes 8 - 12 years to reach maturity.
The production of Tequila comes under three watchdogs - the Mexican government, the Tequila Regulatory Council and the National Chamber. Some drink it must be eh?

► The blue agave plants grown in the highlands of Jalisco, produce tequila which is smoother, and has a fresh, crisp taste, than those grown in the lowlands.
Tequila must not be aged for more than four years, otherwise, it will taste somewhat like whisky.

► All tequila is mezcal but not all mezcal is tequila! Mezcal can be made from a variety of agave plants, while only the blue agave plant produces tequila. Also, the former drink can be produced in multiple Mexican states.
