If you check the ingredients present on a bread loaf pack, the next time you go shopping, you will realize gluten is one of the main ingredients in it. Gluten is a high molecular weight protein naturally present in food stuffs like wheat, rye, barley, and grains used in manufacturing of breads, however, is difficult to digest. Gluten creates a barrier in the intestine resulting in bowel discomforts and thus a gluten-free diet is recommended for such individuals. One of the important food items that is the part of the diet are the gluten-free breads.
Applesauce Bread
  • Sorghum flour, ⅓ cup
  • Whole bean flour, ⅓ cup
  • Cornstarch, ⅓ cup
  • Sugar, ½ cup
  • Xanthan gum (food thickening agent), 2 tsp.
  • Baking powder, 1 tsp.
  • Baking soda, ½ tsp.
  • Salt, ¼ tsp.
  • Cinnamon, ½ tsp.
  • Golden raisins, 1 cup
  • Applesauce, ½ cup
  • Cider vinegar, 1 tsp.
  • Egg whites, 2
In a large bowl, mix cornstarch, sugar, xanthan gum, baking powder and soda, salt, cinnamon, and raisins along with all the flours. Create a well in the middle after thoroughly mixing. In another bowl, take applesauce, vinegar, and egg whites and blend the mixture evenly. Now, pour this mixture into the well and combine properly. Meanwhile, grease a loaf pan with oil, pour the bread mixture, and bake it for about an hour at 360°F. Cool for about half an hour before cutting the bread. The bread appears slight brown and fluffy.
Pumpkin Bread
  • Bean flour, ½ cups
  • Xanthan gum, 3 tsp.
  • Puréed, canned pumpkin, 2 cups
  • Liquid honey, 1 cup
  • Oil, 1 cup
  • Water, ½ cup
  • Eggs, 4
  • Baking soda, 2 tsp.
  • Nutmeg, 1 tsp.
  • Cinnamon, 1 tsp.
  • Salt, ½ tsp.
  • Rice flour, ½ cup
In a large bowl, add all the flours, salt, cinnamon, nutmeg, baking soda, and xanthan gum. Combine these properly. Take another bowl, into which add pumpkin purée, honey, corn oil, eggs, and water and stir them together. You would need to blend the mixture so that the ingredients mix properly. Meanwhile, preheat the oven to 325°F and prepare the loaf pan by sprinkling little amounts of flour onto the base. As before, make a well in the dry mixture bowl and then pour in the pumpkin mixture into it. Mix it well and pour in the loaf pan. Bake for about an hour, let it cool and remove it from the loaf pan. You can eat it with cooked vegetables.
Milk Bread
  • Egg, 1
  • Milk, ¼ cup
  • Oil, 1 tbsp.
  • Sugar, 1 tbsp.
  • Rice flour, 2 cups
  • Xanthan gum, 2 tsp.
  • Instant dry yeast, 2 tsp.
  • Salt, ¾ tsp.
Take a bowl and add flour, salt, xanthan gum, yeast, and sugar and mix well. In another bowl, take egg, oil, and milk and whisk the mixture well. Now, what you need to do is pour the mixtures in the bread maker and set the bread maker to the required values, here 350°F and 1 lb. pressure. After the bread is ready, cool it for sometime and remove it from the bread maker. Cut the loaf and use it.
Rice Soya Bread
  • Eggs, 2
  • Water, ½ cup
  • Butter, ¼ cup
  • Vinegar, 1 tsp.
  • Sugar, ½ tbsp.
  • Powdered milk, 4 tbsp.
  • Brown rice flour, ¼ cup
  • Rice flour, ¼ cup
  • Potato flour, ½ cup
  • Soy flour, 1 cup
  • Xanthan gum, 1 tbsp.
  • Active dry yeast, ½ tbsp.
Initially, take a bowl into which add all the flours and xanthan gum. Keep adding the butter, vinegar, sugar, salt, yeast, powdered milk, and mix thoroughly. Take another bowl and mix eggs and water in it. Pour both the mixtures in the bread maker and set the maker to the required temperature as before. When the dough is all set and fluffy, remove it from the bread maker and let it cool for some time.
