You might think that packing lunch is time-consuming and you won't have the time, but with some time management and proper planning, it is possible to have some healthy lunch options, for when you are on the go.

Chicken Thai Rolls

The required ingredients are 4 flour tortillas, 4 iceberg lettuce leaves, 1 cup red bell pepper sliced into strips, 1 cup shredded roasted chicken, 2 tsp lime juice, 1 tsp grated ginger, ¼ tsp paprika powder, 2 tsp mayonnaise, 1 crushed garlic clove, and ¼ cup chopped coriander leaves.
In a small bowl, add the mayonnaise, lime juice, paprika powder, grated ginger, and crushed garlic, and whisk it well. Now spread ½ tsp of this mixture on the tortillas, and add one iceberg lettuce leaf, a bit of the bell pepper strips, and ¼ of the shredded chicken. Sprinkle coriander leaves, roll the tortilla, and secure with a toothpick.
Turkey Reuben Sandwich

Take 8 rye bread slices, 4 slices of low-fat cheese, 1½ cups sliced roasted turkey, 4 tsp of fat-free thousand island dressing, ⅔ cups sauerkraut, drained and rinsed, and 2 tsp mustard paste. Spread mustard paste over the bread slices and place 1 cheese slice each on 4 bread slices. Arrange the sliced turkey over the cheese slices. Add 2 tsp of sauerkraut and 1 tsp of fat-free thousand island dressing. Arrange the rest of the bread slices over the turkey filling, and your sandwich is ready.
Potato and Tuna Patties

The ingredients required are 500 g potatoes, cut into quarters, 1 celery stalk chopped, ½ cup corn kernels, 1 can tuna, 1 egg yolk, 1 chopped carrot, 1 cup breadcrumbs, 2 tsp chopped coriander, 2 tsp olive oil, ½ cup salad leaves, ½ tsp ground pepper, and salt to taste.
Cook the potatoes and mash with the help of a fork. Cover the bowl with a cling film and place it in the fridge for an hour. Take the mashed potatoes and add flaked tuna, carrot, celery, chopped coriander, egg yolk, and corn kernels. Mix all the ingredients well, and season with salt and ground pepper. Divide and shape the mixture into 8 patties. Gently coat each tuna patty into the breadcrumbs, and shallow fry until golden brown.
Strawberry and Cream Cheese Sandwich

The ingredients required are 2 slices whole wheat sandwich bread, 1 tsp cream cheese, 4 strawberries sliced, ½ tsp honey, and ¼ tsp orange zest. In a small bowl, combine the cream cheese, orange zest, and honey, and mix well. Spread this cream cheese mixture on the bread slices, and arrange sliced strawberries on one side of the bread. Place the other slice over the strawberries, and your sandwich is ready.
